  • Y'all should be proud of me, I've been cooking healthy dinners for myself at work every night instead of eating fastfood/junkfood...yep, I, Amy, am COOKING! *gasps* wonders never cease! lol

    I bought a tiny grill for 11 bucks at ingles that cooks one serving of meat at a time so I've been cooking things like grilled chicken, fish, ground turkey burgers, etc.

    I've also been trying to eat more fruits and veggies and try different/new fruits and veggies.

    I made "spaghetti squash" for the first time tonight. It's actually just squash, the vegetable, not pasta at all, but when you cut it open, it looks JUST LIKE SPAGHETTI on the inside, that's why it's called spaghetti squash. You can actually make it just like spaghetti and put tomatoe sauce, etc, but you can also leave it plane and just add butter/salt or any kind of flavor you want. I put low fat salad dressing on it, it was pretty good, especially for only 37 calories per serving!!!  And zero fat! Way better for you than pasta, lol.

    So yep, I'm rather proud of myself I must say, no more frozen dinners/fast food for me, I'm learning to cook!
